Do you need to set an APN in Thailand?
In the vast majority of cases, no. A travel eSIM carries its own profile, and that profile sets its APN automatically the moment it activates in Thailand. You do not type anything by hand: not your home operator APN, and not a AIS or other local operator APN.
Your travel eSIM APN is not the local operator APN. Even though your eSIM physically connects to the AIS network, it uses its own profile access point, not that of a local SIM.
The only situation where you touch the APN is if your eSIM provider support asks you explicitly with a specific value. This guide shows the exact procedure, and lists the Thailand operator APNs for reference only.
Before you touch anything: check the profile
Nine out of ten failures blamed on the APN are something else. Check this first, in order:
iPhone: Settings, Cellular, Cellular Data, select the eSIM line. Then set Data Roaming to ON for that line. Android: Settings, Network and internet, SIMs, Mobile data, select the eSIM, then Roaming ON. If the eSIM line does not appear at all, the profile did not install: rescan the QR code. A missing profile cannot apply its APN.
Data line, then roaming, then profile. If all three are correct and data still does not pass, then and only then does entering an APN by hand make sense, if support tells you to.
Setting the APN manually (only if support asks)
Do this only if you are given a specific APN value. Otherwise you can break a connection that was working.
On iPhone
Settings, Cellular, your eSIM line, Cellular Data Network. Fill the APN field under Cellular Data with the value support gave you. Leave username and password empty unless told otherwise. Toggle airplane mode to apply.
On Android
Settings, Network and internet, SIMs, your eSIM line, Access Point Names, add an APN with the plus button. Fill only the APN field with the given value, save, then select it. Restart if data does not come through right away.
Never overwrite the profile APN without reason. If you added an APN and data stopped, delete it: the automatic profile APN takes over again.
Thailand operator APNs (for reference)
These are the local operator APNs. They are given for reference only: they are the APNs of local physical SIMs, not the ones to enter on your travel eSIM line.

These values are for the local SIM cards of AIS, dtac and TrueMove H. Entering one of these APNs on your travel eSIM line overwrites the profile access point and cuts your data instead of restoring it.
Why the APNs you find online do not work
A quick search returns dozens of APN values for Thailand operators. The problem: those are the APNs of local physical SIMs, not travel eSIMs. Your eSIM uses a specific profile with its own built-in APN. Even when it connects to the same network, the access point is different.
If you already entered an APN by hand and data will not pass: delete the APN you added, or reset network settings (iPhone: Settings, General, Transfer or Reset, Reset Network Settings). The automatic profile APN will be restored.
If your data works, never touch the APN. The only legitimate case for manual entry is an explicit support instruction with a specific value.
